Shrimp Cocktail Ring

2lbs ice
6 cups water
2 tbsp kosher Salt
2 tbsp granulated sugar
1/2 small onion (peeled and halved)
1 tbsp small bunch parsley
2 lemons
2lb shrimp (peeled and deveined)
Cocktail Sauce:
1/2 cup mild chili sauce
1/2 cup ketchup
1 tsp lemon zest
2 tbsp fresh lemon juice
1 tbsp horseradish
1 tsp Worcestershire sauce
2 dashes hot sauce
1/4 cup celery salt
1. fill a bowl halfway with ice and water, set aside. Cut lemon into wedges
2. In a large pot combine 6 cups water, salt, sugar, onion, and 5 sprigs parsley. Halve and juice remaining lemon and add to pot. Bring to a boil, then turn off heat and add shrimp.
3. Let sit until shrimp is cooked and pink, about 3 minutes. Remove shrimp form pot with a slotted spoon, into bowl of ice
Cocktail Sauce
1. Mix all ingredients till full combined.
2. Serve with shrimp, lemon wedges and garnish with parsley
