Ingredients

1/4 cup all purpose Flour

1/4 cup medium grind yellow cornmeal

1 tsp old Bay

1 sleeve saltine crackers

2 large eggs

1 tub Oyster Meat

4 cups oil

Directions
  1. Whisk flour, cornmeal, and old bay in a bowl. In food processer, pulse crackers until coarse crumbs. Transfer crushed crackers into a bowl. Beat eggs to blend in another bowl, creating dredging station. 3 bowls total
  2. one at a time coat oyster in flour mixture, tapping excess. Coat in egg, and then dip in crackers. Press crackers mixture into oyster to adhere, lay prepped oysters out on paper towel. Repeat with resto of oyster, refrigerate for 10-15 minutes
  3. fill a large pot with oil, heat until 375 degrees. working in batches, fry oysters, letting oil return to temperature between each batch, fry until golden brown and crispy, 1-2 minutes.
  4. place fried oysters on paper towel, transfer to plates, top with chives and serve with lemon wedges.
