Coconut Shrimp

1/3 all-purpose flour
1/2 tsp ground black pepper
3/4 cups panko bread crumbs
2 large eggs
1 cup sweetened shredded coconut
1 pound raw jumbo shrimp (peeled and deveined)
3-4 tbsp oil (coconut, olive, or vegetable)
1 tbsp finely chopped cilantro (optional)
1. Prepare 3 bowls. bowl 1 – combine flour, salt, pepper. Bowl 2 – beat the eggs. Bowl 3 – combine panko and coconut
2. Dip shrimp in flour, then eggs, and then dredge the shrimp in coconut. push it in nicely, you want a nice coat on your shrimp. Set shrimp aside as you coat remaining shrimp.
3. Cover the bottom or a large skillet with oil. Fry coated shrimp over medium heat in small batches. flip after 2-3 minutes and fry on other side. Make golden brown.
4. place on paper towel, if preferred put cilantro on shrimp.
5. Use a dipping sauce of your choice, something sweet and spices is recommended!
