COOKING METHODS: Smoked, Grilled, Sauté, Baked, sashimi, poached, BBQ, cured, gravlax style 

FISH TIPS: Don’t overcook, this lean fish will dry out quickly so keep a fisheye out on it. There is also a high concentration of Omega 3’s in fish skin which is great for your heart health! Best to slightly crisp the skin when cooking by starting with a hot oiled pan and skin down first when frying and yes you CAN eat the scales too!
