Horseradish - Lessig Ferments

This horseradish condiment is made using Alberta horseradish from rich black soil grown at Fifth Gen Gardens. We used organic dairy from Vital Greens Farms and fermented it with buttermilk culture. This take on a classic creamed horseradish is finished with Indonesian Muntok peppercorns for a rounded profile. A perfect pairing with roast beef, steaks or on your favourite sandwich!

Lessig Ferments was founded in 2021 by Edmonton chef Roger Letourneau. Along with co-owner and Fiancé, Christine Sandford, the two have spent their careers working as chefs in Edmonton, Belgium, Denmark and France.
