“Cheesy Wheezy” a take on spicy cheese. We co-fermented hot house peppers from southern Alberta with Vital Greens Organic Dairy & blended it with slow fermented habaneros. A true lacto-lactic hot sauce!
This syle of hot sauce combines fermentation and a technique used for making fondue. The origin of this technique allows milk fat and protein to create a smooth emulsion and carries the colorful pigments found in habanero and peppers.

Lessig Ferments was founded in 2021 by Edmonton chef Roger Letourneau. Along with co-owner and Fiancé, Christine Sandford, the two have spent their careers working as chefs in Edmonton, Belgium, Denmark and France.
