  • El Mercado Corn Tortillas

  • Salt & pepper (generous)

  • Optional: squeeze of lime

  • Lakeside Farmstead Cheddar

  • Lessig Ferments Cheesy Wheezy Sauce

  • Diced white onion

  • Fresh chopped cilantro

This is your taco shop classic, dialled up. Juicy, flame-seared skirt steak, fresh onion and cilantro for bite, and just enough cheese and sauce to keep things indulgent without getting in the way.

Directions:

  1. Season simply
    Pat steak dry. Season generously with salt and pepper on both sides.

  2. Sear hot and fast
    Heat a pan or grill to high. Cook steak 3–5 minutes per side until nicely charred.

  3. Rest and slice
    Rest 5 minutes, then slice thin against the grain.

  4. Warm tortillas
    Char lightly for that authentic taco flavour.

  5. Build your taco
    Add sliced steak, a pinch of cheddar, diced onion, and cilantro.

  6. Finish it right
    Drizzle lightly with Cheesy Wheezy. Optional squeeze of lime.
