Oyster Rockefeller


24 Medium Oysters, live in shell

1/2 tbsp olive oil

2 shallots ( finely  minced)

9 oz fresh baby spinach

2oz cream cheese

3 tbsp half and half cream

3 tbsp Romano cheese (grated)

1/4 cup panko crumbs


Rinse and shuck Oysters


  1. in large skillet, heat 1/2 tbsp olive oil and shallots over medium heat. 3-4 minutes.
  2. add spinach, season with salt and pepper, mix until spinach wilts down
  3. add cream cheese, half and half cream and Romano. mix until cream cheese melts, refrigerate until cool.
  4.  Reheat oven to broil on high with the rack 6 inches from the heating element.
  5. Place 1 tbsp of spinach mixture on top of oyster, then add 1/2 tsp panko
  6. broil 5-7 minutes, until golden brown
  7. Serve hot!
