Effing Maple-Orange Glazed Steelhead Salmon

Ingredients

1lb Steelhead Salmon

3 tbsp Maple syrup

2 tbsp Orange Juice

1 tsp Orange Zest

3 Orange Slices

½ clove Garlic (Minced)

1 tsp Ponzu

1 tsp Butter

Salt Pepper Olive oil

1 pound of potatoes

2 medium carrots

1 small head of broccoli

Directions
  1. Preheat oven to 400°F and line the baking sheet with foil.
  2. Making the Glaze: In a small saucepan over medium heat, combine: Maple syrup, orange juice, orange zest, garlic, and ponzu sauce. Simmer for 3-4 min, stir occasionally, until slightly thick.
  3. Salmon: Place Salmon skin-side down on baking sheet. lightly brush with olive oil, then season with salt & pepper. Brush a generous layer of the maple-orange glaze over the fish. Arrange a few orange slices on top for extra flavour. Bake for 12-15 min or internal temp of 130°F. Halfway through, brush with more glaze.
  4. Serve: Serve with extra glaze drizzled over top.
  5. Pairing: Garlic mashed potatoes Roasted Broccoli and Carrots
