Effing Good Lobster Rolls

  • 1 lb TCK lobster meat (thawed if frozen, gently patted dry)

  • 3–4 tbsp mayonnaise

  • 1 tsp Dijon mustard

  • 1 tbsp fresh lemon juice

  • 1–2 tbsp finely chopped celery

  • 1 tbsp finely chopped chives

  • ½–¾ tsp Effing Seafood Spice Blend (start light, adjust to taste)

  • Salt & fresh cracked pepper, if needed

  • 4 top-split brioche or New England–style buns

  • 2–3 tbsp butter (for toasting buns)

This is the kind of sandwich that doesn’t need fireworks. It already is one. Sweet, tender lobster folded into a light, creamy dressing, tucked into a buttery toasted bun that crackles when you bite it. Summer in your hands.

Directions

Step 1: The Filling

  1. Roughly chop lobster into generous bite-sized pieces. Keep it chunky.

  2. In a bowl, mix mayo, Dijon, lemon juice, celery, chives, and Effing Seafood Spice Blend.

  3. Gently fold in lobster until coated.

  4. Taste before adding salt. The spice blend may already bring enough savoury depth.

Chill while you toast the buns.

Step 2: Toast the Buns

Butter the outer sides and toast in a skillet over medium heat until golden and crisp on the edges.

Step 3: Build

Fill each bun generously. Finish with a light sprinkle of extra chives or a tiny dusting of Effing Seafood Spice Blend if you want that aroma to hit first.

Tip

Mix the lobster and dressing just before serving if prepping ahead. It keeps everything bright and fresh.
