Creamy John Dory & Scallop Pasta
Ingredients

Ingredients:
- 4 John Dory fillets (approx 8oz each)
- 10oz Bay Scallops
- 400g pasta (fettuccine, tagliatelle, or spaghetti)
- 4 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup dry white wine
- 1 1/2 cups Lakeside Farmstead heavy cream
- Zest and juice of 1 lemon
- 2 tbsp butter
- 4 handfuls baby spinach
- Salt & pepper, to taste
Fresh parsley, chopped, for garnish
Directions
Instructions:
- Cook pasta:
Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain. - Sear John Dory:
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Season fillets with salt and pepper and sear 2–3 minutes per side until golden and just cooked. Remove and set aside. - Make sauce & cook scallops:
In the same skillet, add 2 tbsp olive oil and sauté garlic 30 seconds. Pour in white wine and reduce 1–2 minutes. Stir in heavy cream, butter, lemon zest, and lemon juice. - Add scallops, clams, and spinach:
Add bay scallops and let simmer 2–3 minutes until scallops are just opaque. Toss in baby spinach and cook 1–2 minutes until wilted.
- Combine pasta & sauce:
Toss pasta in the sauce, adding reserved pasta water if needed to loosen. - Plate & serve:
Divide pasta among 4 plates, making a nest in the center of each. Place a John Dory fillet on top of each pasta portion. Garnish with fresh parsley and serve immediately.
