Creamy John Dory & Scallop Pasta

Ingredients:

  • 4 John Dory fillets (approx 8oz each)
  • 10oz Bay Scallops
  • 400g pasta (fettuccine, tagliatelle, or spaghetti)
  • 4 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 1/2 cups Lakeside Farmstead heavy cream
  • Zest and juice of 1 lemon
  • 2 tbsp butter
  • 4 handfuls baby spinach

 

  • Salt & pepper, to taste

Fresh parsley, chopped, for garnish

Directions

Instructions:

  1. Cook pasta:
    Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
  2. Sear John Dory:
    Heat 2 tbsp olive oil in a large skillet over medium-high heat. Season fillets with salt and pepper and sear 2–3 minutes per side until golden and just cooked. Remove and set aside.
  3. Make sauce & cook scallops:
    In the same skillet, add 2 tbsp olive oil and sauté garlic 30 seconds. Pour in white wine and reduce 1–2 minutes. Stir in heavy cream, butter, lemon zest, and lemon juice.
  4. Add scallops, clams, and spinach:
    Add bay scallops and let simmer 2–3 minutes until scallops are just opaque. Toss in baby spinach and cook 1–2 minutes until wilted.
  5. Combine pasta & sauce:
    Toss pasta in the sauce, adding reserved pasta water if needed to loosen.
  6. Plate & serve:
    Divide pasta among 4 plates, making a nest in the center of each. Place a John Dory fillet on top of each pasta portion. Garnish with fresh parsley and serve immediately.
