Ingredients

What You’ll Need

  • Lakeside Farmstead WagyuX Beef Ribs / Short Ribs
  • 2 tbsp olive oil

Dry Rub

  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • ½ tsp cayenne (optional heat)

BBQ Sauce Glaze

  • 1 cup BBQ sauce (your favourite)
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

Rubbed, smoked, and cooked until the meat is fall-apart tender with that rich, buttery Wagyu finish. We glaze them sticky, caramelized, and just a little dangerous.

Directions

Step 1: Prep the Ribs

Pat ribs dry. Rub lightly with olive oil, then coat generously with the dry rub.
Let them sit at room temp for 30–45 minutes (or overnight in the fridge if you’ve got time).


Step 2: Fire Up the BBQ

Set your grill for indirect heat at 275°F (135°C).
If you’ve got wood chips (hickory or apple), toss them on for that deep, smoky edge.


Step 3: Low & Slow Cook

Place ribs bone-side down on the indirect side.
Close the lid and let them cook for 2.5–3.5 hours.

You’re looking for:

  • Deep bark (that crust = flavour gold)
  • Tender meat pulling back from the bone

Step 4: Wrap & Tenderize

Wrap ribs tightly in foil with a small splash of apple juice or beef broth.
Back on the grill for 1.5–2 hours until they’re fork-tender.


Step 5: Glaze & Finish

Mix BBQ sauce, honey, mustard, and vinegar.
Unwrap ribs, brush generously, and return to grill (still indirect or low direct heat).

Cook another 20–30 minutes, flipping and glazing once more, until sticky and caramelized.


Step 6: Rest & Serve

Rest for 10 minutes, slice between bones, and serve.
